Now that the holidays are behind us I thought it would be fun to start blogging again. Carlo and I both thought long and hard about what direction this blog should take. We finally came to the conclusion that we should combine both our loves (he is a photographer and I love to cook) and do a few blogs about food. Once that decision was made, we had to decide what to cook and who's recipes would we use. Naturally, we went with the queen of the kitchen Ina Garten - the Barefoot Contessa - who doesn't love Ina? Isn't she fabulous? I mean, who doesn't want to live in that house in the Hamptons cooking all day long only using only "good" ingredients and always opting for homemade, So, instead of Miguel creating the tablescapes, and Michael the Florist creating the arrangements we have Carlo and myself puttering around the kitchen frantically trying to decide if we will use the green napkins or red napkins... We are just waiting for "TR" to knock on the door so we can have a glass of "good" Champagne... Oh well, I digress.
I should add that although we will primarily use Ina's recipes neither Carlo or myself eat meat or chicken (we do it fish) so I am sure we will deviate here and there. So here goes - this time we are doing quick but will eventually go into more detail about preparation.
For our first culinary adventure, we decided to make Ina's Roasted Butternut Squash and Panko-Crusted Salmon. Both wonderful and healthy choices. Most of the cooking is done by yours truly, and all the photography is done by the wonderfully talented Carlo B! The Squash recipe can be found online at
Chopping some thyme for the squash! Excellent if somewhat unexpected addition.
The squash is all chopped and ready to go!
Next on to the salmon. The recipe can be found here:
The salmon in process - read the recipe carefully and let the fish sear before putting the pan in a hot oven, DON'T move the fish!
The delicious and healthy finished product!
